Pumpkin Nutter Butters
Ingredients:
1/4 cup nut butter {i used @abbysbetter pumpkin spice pecan butter}
1/2 cup pumpkin purée
1 cup oat flour {i bought one from @wholefoods but you can also just blend oats until you get a flour consistency}
1/2 tsp. baking powder
1/4 cup granulated sugar {i used coconut sugar}
Directions:
Preheat oven to 350F.
Whisk together the nut butter & pumpkin purée, then stir in the flour, sugar, and baking powder.
I used a mini cookie scoop to make 11 cookies {22 scoops total}, then used a fork to press each one down {i dipped it in a little extra oat flour so that it wouldn’t stick to the cookies}
Bake for 8 minutes, then let them cool before filling with extra nut butter!
