Cinnamon Pear Roll-Ups
Ingredients:
2-3 pears
1 cup all purpose flour {i used @bobsredmill 1:1 gluten free baking flour}
1/2 tsp. baking powder
3 tbsp. coconut sugar
2 tsp. cinnamon
3 tbsp. cold butter {I used @kitehillfoods vegan butter}
5 tbsp. cold water
Directions:
Preheat oven to 350F
In a large bowl, whisk together the flour, baking powder, sugar, & cinnamon—then add in the cold butter + cold water and mix together with a fork. {use your hands towards the end to form a dough ball}
Place the dough onto a cutting board, flatten into a circle, and cut thin slices.
Cut the pears into big slices and wrap dough around each slice {the dough will stick better if you slightly dry the pears with a paper towel first}
Bake for 13-15 minutes, then top with honey + granola!
