Cinnamon Gluten Free Biscuits

Ingredients:

  • 2 cups oat flour {you can buy oat flour or make your own by blending oats until you get a flour consistency}

  • 1/2 tsp. baking soda

  • 2 tsp. cinnamon

  • 2 eggs

  • 1/4 cup honey

  • 2 tbsp. oil {i used @publicgoods EVOO}

Directions:

  1. Preheat oven to 350F & spray/line a baking sheet.

  2. In a large bowl, whisk together the dry ingredients.

  3. In a small bowl, whisk together the wet ingredients.

  4. Pour the wet ingredients into the dry and stir until well combined.

  5. Let the dough sit for about 5 minutes {for the batter to thicken}

  6. Use two spoons to drop about 1/4 cup of dough per biscuit onto the baking sheet {makes 6 biscuits}

  7. Bake for 10 minutes, place them on a cooling rack, and top with avocado/butter/jam/nut butter/etc!
