Cinnamon Gluten Free Biscuits
Ingredients:
2 cups oat flour {you can buy oat flour or make your own by blending oats until you get a flour consistency}
1/2 tsp. baking soda
2 tsp. cinnamon
2 eggs
1/4 cup honey
2 tbsp. oil {i used @publicgoods EVOO}
Directions:
Preheat oven to 350F & spray/line a baking sheet.
In a large bowl, whisk together the dry ingredients.
In a small bowl, whisk together the wet ingredients.
Pour the wet ingredients into the dry and stir until well combined.
Let the dough sit for about 5 minutes {for the batter to thicken}
Use two spoons to drop about 1/4 cup of dough per biscuit onto the baking sheet {makes 6 biscuits}
Bake for 10 minutes, place them on a cooling rack, and top with avocado/butter/jam/nut butter/etc!
