Cinnamon Raisin Cookies

Ingredients:

  • 1 1/2 cup gluten-free all purpose flour {or regular AP flour}

  • 1/2 cup coconut sugar

  • 1 tsp. baking powder

  • 1/3 cup raisins

  • 1 tbsp. cinnamon

  • 1/2 cup almond milk

  • 1 egg

Directions:

  1. Preheat oven to 350F.

  2. In a small bowl, whisk together the egg & milk.

  3. In a large bowl, whisk together the flour, sugar, & baking powder—then stir in the raisins.

  4. Pour the wet ingredients into the dry and stir until a dough forms. {the dough may be slightly sticky, so you can coat your hands with a little flour before rolling}

  5. Roll the dough into 15-18 balls, flatten, & bake for 8 minutes!
