Cinnamon Raisin Cookies
Ingredients:
1 1/2 cup gluten-free all purpose flour {or regular AP flour}
1/2 cup coconut sugar
1 tsp. baking powder
1/3 cup raisins
1 tbsp. cinnamon
1/2 cup almond milk
1 egg
Directions:
Preheat oven to 350F.
In a small bowl, whisk together the egg & milk.
In a large bowl, whisk together the flour, sugar, & baking powder—then stir in the raisins.
Pour the wet ingredients into the dry and stir until a dough forms. {the dough may be slightly sticky, so you can coat your hands with a little flour before rolling}
Roll the dough into 15-18 balls, flatten, & bake for 8 minutes!
