Blueberry Crisp Baked Oatmeal
Ingredients:
1/3 cup rolled oats
1/4 tsp. baking powder
1 tbsp. pure maple syrup {or honey}
1/4 cup almond milk
1 egg
2-3 tbsp. blueberries {fresh or frozen}
CRISP TOPPING:
3 tbsp. rolled oats
1 tbsp. pure maple syrup {or honey}
1/4 tsp. cinnamon
Directions:
Preheat oven to 350F & grease a small oven-safe bowl {I used a mini loaf ramekin from @tuesdaymorning — about 10oz}
In a high powered blender, blend together the first 5 ingredients, stir in the blueberries, and pour into the ramekin.
Top with crisp mixture and bake for 25-28 minutes! {Topped with @siggis vanilla yogurt mixed with blueberry juice}
