Peanut Butter & Jelly Banana Muffins
Ingredients:
1 cup all purpose flour {I used @bobsredmill gluten-free 1:1 baking flour}
1/2 cup granulated sugar {I used coconut sugar}
1 tsp. baking powder
1/2 cup mashed banana {about 1 large banana}
1/3 cup peanut butter
1/3 cup milk {I used almond milk}
2 eggs
Directions:
Preheat oven to 350F & line a muffin tin. {I like to spray the liners with a little oil too}
In a large bowl, whisk together the mashed banana, peanut butter, milk, and eggs.
Stir in the dry ingredients and scoop the batter into the muffin tin {makes 10 muffins.}
Bake for 19 minutes! {Once cooled, I topped with @missjonesbakes vanilla frosting mixed with mashed strawberries + PB swirl}
