Sweet Potato Quinoa Hashbrowns

SWEET POTATO QUINOA HASH BROWNS! I'm always trying to come up with more simple lunch/dinner/snack ideas that are still flavorful and this one is a keeper for sure. All you need is three ingredients + spices, so it's definitely a quick & easy meal to throw together. It makes 4 hash browns, but if you are wanting to have more prepped for the week you can easily double the recipe! There are so many nutrients packed in these hash browns-- including antioxidants and vitamins A & C. I topped them with a little layer of hummus, avocado slices, and hemp hearts to make them a more filling, but you can also do ketchup/any other topping you'd like!
Sweet Potato Quinoa Hash Browns:
1/2 cup CeCe's Veggie Co. white sweet potato noodles
1/2 cup cooked quinoa
1 egg
Salt/pepper
Directions:
In a large bowl, whisk together the egg & salt/pepper.
Stir in the noodles and quinoa.
Slightly grease a pan (I used avocado oil) and set the temp to medium heat.
Use a big spoon to make little circles of batter on the pan and cook for 2-3 minutes on each side (or until slightly crispy).
Eat them right away or store in the fridge for up to a week.
