Sugar Cookie Bars

Ingredients:

  • 1 cup all-purpose flour {I used @bobsredmill gluten-free 1:1 baking flour}

  • 1 1/3 cup almond flour

  • 1 tsp. baking powder

  • 1/2 cup coconut sugar

  • 1/4 cup almond milk

  • 1 tsp. vanilla extract

  • 2 eggs

Directions:

  1. Preheat oven to 350F & grease an 8x8 baking dish.

  2. Whisk together the milk, vanilla extract, & eggs—then stir in the rest of the ingredients.

  3. Place the dough into the baking dish; the dough will be sticky, so you can grease a piece of parchment paper or a rubber spatula to press it down into an even layer.

  4. Bake for 14 minutes and top with frosting!
