Lemon Chia Muffins
Ingredients:
1 cup all purpose flour {I used @bobsredmill gluten-free 1:1 baking flour}
1/2 cup granulated sugar {I used coconut sugar}
1 tsp. baking powder
2 tbsp. chia seeds (or poppy-seeds)
1/4 cup oil {I used EVOO}
1/4 cup milk {I used almond milk}
1/4 cup lemon juice {about 1 1/2 lemons}
2 eggs
Directions:
Preheat oven to 350F & line a muffin tin {makes 9 large muffins; if you spray the muffin liners with a little oil first, the muffins come out so easily!}
In a large bowl, whisk together the flour, sugar, baking powder, & chia seeds.
In a small bowl, whisk together the milk, oil, eggs, and lemon juice.
Pour the wet ingredients into the dry & stir until well combined.
Scoop the batter into the muffin tin and bake for 15 minutes! {Icing is 1/4 cup powdered sugar + 1 tsp. water}
