Protein Chickpea Cookies
These flourless protein chickpea cookies are made in the food processor and they’re soo good + chewy! I forget just how much I love baking with chickpeas. Pressed them down with a fork because that’s more fun haha and topped them with @simplemills vanilla icing!
Ingredients:
1 15.5oz can of garbanzo beans {rinsed & drained}
1 egg
1/3 cup coconut sugar
1/4 cup nut/seed butter {I used @abbysbetter date pecan butter}
1 tsp. cinnamon
1/4 tsp. baking powder
1/2 cup vanilla protein powder {I used @nuzest_usa smooth vanilla— you could also use all purpose flour}
Directions:
Preheat oven to 350F & spray/line a baking sheet.
Put all of the ingredients into a food processor & blend until a dough ball forms.
Roll the dough into 19-20 balls, flatten with a fork, & bake for 8-10 minutes!
