Lemon Blueberry Pop Tarts
Does anyone remember the frosted wild berry pop tarts?! Well I basically created a healthier version and they’re SO GOOD! I made a lemon blueberry filling & topped them with @simplemills vanilla icing + mashed blueberries. Such a fun way to start the day!
Ingredients:
1 1/2 cups gluten free all purpose flour {or regular AP flour}
2 tbsp. coconut sugar
3 tbsp. cold butter {I used @foragerproject vegan butter}
5 tbsp. cold water
Filling:
Mashed blueberries
Coconut sugar
Lemon juice
All purpose flour {just a small amount to thicken the mixture}
Directions:
Preheat oven to 350F.
In a large bowl, whisk together the flour & sugar then add in the cold butter and cold water with a fork. {use your hands towards the end to form a dough ball; if it looks too dry—add 1 tbsp. of water at a time.}
Place the dough onto a cutting board, flatten into a rectangle, & cut into 12 slices.
Stir together the filling ingredients in a bowl {you can use however much of each ingredient that you’d like} and place small amounts in the middle of 6 dough sheets.
Place the remainder dough sheets on top, press the edges together with a fork, & bake for 8-10 minutes!
