Mini Orange Muffins

Ingredients:

  • 1 1/2 cup almond flour

  • 1 cup gluten free baking flour {OR all purpose flour}

  • 1/2 cup coconut sugar

  • 1/2 tsp. baking powder

  • 1/4 cup almond milk

  • 1 egg

  • 1/4 cup freshly squeezed orange juice

  • 1 tbsp. orange zest

Directions:

  1. Preheat oven to 350F and spray/line a mini muffin tin.

  2. Whisk together the dry ingredients in a large bowl, then whisk together the wet ingredients in a separate bowl.

  3. Pour the wet ingredients into the dry ingredients and stir until well combined.

  4. Spoon the batter into 17 mini muffin cups & bake for 12 minutes. {Optional: top with melted white chocolate and chopped walnuts!}
