Mini Orange Muffins
Ingredients:
1 1/2 cup almond flour
1 cup gluten free baking flour {OR all purpose flour}
1/2 cup coconut sugar
1/2 tsp. baking powder
1/4 cup almond milk
1 egg
1/4 cup freshly squeezed orange juice
1 tbsp. orange zest
Directions:
Preheat oven to 350F and spray/line a mini muffin tin.
Whisk together the dry ingredients in a large bowl, then whisk together the wet ingredients in a separate bowl.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Spoon the batter into 17 mini muffin cups & bake for 12 minutes. {Optional: top with melted white chocolate and chopped walnuts!}
