Mini Gluten Free Cinnamon Rolls
Ingredients:
1 1/4 cup gluten free flour {i used @bobsredmill 1:1 flour}
1 cup yogurt {i used @siggisdairy plain}
1 tsp. baking powder
1/4 cup melted butter {i used @kitehillfoods butter}
1-2 tbsp. cinnamon
1/4 cup coconut sugar
Directions:
Preheat oven to 350F.
In a large bowl, whisk together the flour and baking powder, then stir in the yogurt {use your hands towards the end to form a dough ball}
Roll out the dough into three small rectangles, then coat the tops with melted butter, cinnamon, and coconut sugar.
Roll up each dough piece, cut into small pieces, then coat the tops with a little more melted butter + cinnamon + coconut sugar and bake for 8 minutes! {topped mine with a mixture of honey + @siggisdairy yogurt}
