Mini Blueberry Biscuits

Ingredients:

  • 1 1/4 cup almond flour

  • 1/2 tsp. baking powder

  • 2 tbsp. butter {melted}

  • 1 egg

  • 3-4 tbsp. frozen wild blueberries

Directions:

  1. Preheat oven to 350F and spray/line a baking sheet.

  2. In a small bowl, whisk together the almond flour & baking powder.

  3. Stir in the melted butter until well combined, then stir in the egg until a dough forms.

  4. Fold in the blueberries & roll dough into 7 balls.

  5. Slightly flatten them on the baking sheet & bake for 15 minutes. {Best enjoyed with extra butter on top!}
