Football Cookie Cupcakes
Ingredients:
3/4 cup all purpose flour {i used @bobsredmill gluten free baking flour}
1/2 cup coconut sugar
1/2 tsp. baking powder
1/4 cup peanut butter
1/2 cup almond milk
2 eggs
cookies of your choice {i used @goodiegirlcookies mint chocolate cookies}
Directions:
Preheat oven to 350F & line a muffin tin.
Whisk together the eggs, peanut butter, and almond milk in a large bowl, then stir in the dry ingredients + 10 crumbled cookies.
3. Scoop the batter into the muffin tin {makes 10-11 cupcakes} and bake for 15 minutes!
