Cinnamon Streusel Banana Muffins
Ingredients:
2 small ripe bananas {1/2 cup mashed}
1/2 cup plain or vanilla yogurt
2 eggs
1/2 cup coconut sugar
1/2 cup cassava flour {or all purpose flour}
1 cup almond flour
1/2 tsp. cinnamon
1/2 tsp. baking powder
Directions:
Preheat oven to 350F and spray/line a muffin tin.
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Pour the batter into the muffin tin {makes 12 muffins} & top with crumb mixture. {recipe below}
Bake for 18 minutes!
