Pumpkin Chocolate Chip Loaf

Ingredients:

  • 1/2 cup all-purpose flour {I used @bobsredmill gluten free 1:1 baking flour}

  • 1 cup almond flour

  • 1/2 cup coconut sugar

  • 1 tsp. cinnamon

  • 1 tsp. baking powder

  • 1/3 cup chocolate chips

  • 1/4 cup almond milk

  • 1/2 cup pumpkin purée

  • 2 eggs

Directions:

  1. Preheat oven to 350F and spray/line a loaf pan.

  2. In a large bowl, whisk together the dry ingredients—then stir in the chocolate chips.

  3. In a small bowl, whisk together the pumpkin purée, milk, and eggs.

  4. Pour the wet ingredients into the dry and stir until well combined.

  5. Pour batter into the loaf pan, top with extra chocolate chips, and bake for 32 minutes!
