Mini Strawberry Muffins

Mini Strawberry Muffins

Ingredients:

  • 1 cup all purpose flour {I used gluten-free 1:1 baking flour}

  • 1/2 cup granulated sugar {I used coconut sugar}

  • 1 tsp. baking powder

  • 1/2 cup diced strawberries {I used frozen}

  • 1/4 cup melted butter or oil {I used ghee}

  • 1/2 cup @oatsomeoatmilk Oat Milk

  • 2 eggs

Directions:

  1. Preheat oven to 350F & line a muffin tin {makes 28 mini muffins or 9 large muffins; if you spray the muffin liners with a little oil first, the muffins come out so easily!}

  2. In a large bowl, whisk together the flour, sugar, & baking powder—then stir in the strawberries.

  3. In a small bowl, whisk together the milk, oil, and eggs.

  4. Pour the wet ingredients into the dry & stir until well combined.

  5. Scoop the batter into the muffin tin and bake mini muffins for 13 minutes and large muffins for 19 minutes! {Icing is 1/4 cup powdered sugar + 1 tsp. water}
