Mini Blueberry Poptarts
Crust Ingredients:
1 cup all purpose flour {i used @bobsredmill gf 1:1 baking flour}
1/2 cup melted butter {I used @kitehillfoods vegan butter}
Filling Ingredients:
1/3 cup mashed blueberries {i microwaved frozen wild blueberries & drained some of liquid}
1/4 cup coconut sugar
Directions:
In a large bowl, combine the melted butter and flour.
Roll the dough into a ball & place in the fridge for at least 10 minutes.
Preheat oven to 350F and spray/line a baking sheet.
Flatten the dough into a thin square & cut into 16 small squares.
Place 8 squares onto the baking sheet, add 1/2 tsp.-1 tsp. of the filling to the middle of each and use a spatula to carefully place the remaining 8 squares on top.
Press the edges together with a fork & bake for 10 minutes! Let cool before topping; I used powdered sugar and blueberry juice + white chocolate.
