Lemon Blueberry Mug Cake
Ingredients:
1 egg
3 tbsp. lemon juice
3 tbsp. coconut sugar
1/4 tsp. baking powder
3 tbsp. almond flour
2 tbsp. all purpose flour {i used @bobsredmill gf 1:1 flour}
2-3 tbsp. blueberries {i used frozen}
Directions:
In a microwave safe mug or small bowl, whisk together the egg and lemon juice.
Stir in the dry ingredients, top with blueberries, and microwave for 1 1/2 - 2 minutes!
