Lemon Blondies
Ingredients:
1 cup all purpose flour {I used gluten-free}
2/3 cup almond flour
1 tsp. baking powder
1/2 cup coconut sugar
1/4 cup almond milk
1/4 cup lemon juice
Lemon zest {from 1 lemon}
2 eggs
Directions:
Preheat oven to 350F & grease/line an 8x8 baking dish.
In a large mixing bowl, whisk together the dry ingredients.
In a small mixing bowl, whisk together the wet ingredients + lemon zest.
Pour the wet ingredients into the dry and stir until combined.
Spread the batter into the baking dish and bake for 18 minutes!
