Lemon Blondies

Ingredients:

  • 1 cup all purpose flour {I used gluten-free}

  • 2/3 cup almond flour

  • 1 tsp. baking powder

  • 1/2 cup coconut sugar

  • 1/4 cup almond milk

  • 1/4 cup lemon juice

  • Lemon zest {from 1 lemon}

  • 2 eggs

Directions:

  1. Preheat oven to 350F & grease/line an 8x8 baking dish.

  2. In a large mixing bowl, whisk together the dry ingredients.

  3. In a small mixing bowl, whisk together the wet ingredients + lemon zest.

  4. Pour the wet ingredients into the dry and stir until combined.

  5. Spread the batter into the baking dish and bake for 18 minutes!
