Cranberry Orange Muffins

Ingredients:

  • 1/4 cup fresh orange juice

  • 1/4 cup almond milk

  • 2 eggs

  • 1/2 cup coconut sugar

  • 1 cup @bobsredmill 1:1 gf flour

  • 1/2 cup almond flour

  • 1 tsp. baking powder

  • 1/2 cup dried cranberries {i used @madeinnature}

Directions:

  1. Preheat oven to 350F and spray/line a muffin tin.

  2. In a small bowl, whisk together the wet ingredients.

  3. In a large bowl, whisk together the dry ingredients + stir in the cranberries and macadamia nuts.

  4. Pour the wet ingredients into the dry and stir until well combined.

  5. Scoop batter into a muffin tin {about half way—makes 10 muffins} & bake for 18 minutes! {i topped mine a protein glaze: @nuzest_usa smooth vanilla protein + honey + almond milk & sprinkles}
