Cranberry Orange Muffins
Ingredients:
1/4 cup fresh orange juice
1/4 cup almond milk
2 eggs
1/2 cup coconut sugar
1 cup @bobsredmill 1:1 gf flour
1/2 cup almond flour
1 tsp. baking powder
1/2 cup dried cranberries {i used @madeinnature}
Directions:
Preheat oven to 350F and spray/line a muffin tin.
In a small bowl, whisk together the wet ingredients.
In a large bowl, whisk together the dry ingredients + stir in the cranberries and macadamia nuts.
Pour the wet ingredients into the dry and stir until well combined.
Scoop batter into a muffin tin {about half way—makes 10 muffins} & bake for 18 minutes! {i topped mine a protein glaze: @nuzest_usa smooth vanilla protein + honey + almond milk & sprinkles}
