Blueberry S'mores Mug Cake
Ingredients:
1 egg
1/2 tbsp. olive oil
2 tbsp. mashed blueberries {I used frozen wild blueberries & thawed before mashing; also make sure to mash then measure.}
3 tbsp. gluten free all purpose flour
1/4 tsp. baking powder
1 tbsp. coconut sugar
1 tbsp. chocolate chips
Marshmallows
Directions:
In a microwavable mug, whisk together the egg, olive oil, and mashed blueberries.
Stir in the rest of the ingredients {except the marshmallows} & microwave for 45 seconds.
Top with small marshmallow pieces and microwave for an additional 15 seconds. Enjoy!
