Blueberry Almond Butter Cupcakes
These BLUEBERRY ALMOND BUTTER cupcakes are sooo cute and fluffy + they legit taste like Dunkin Donuts blueberry munchkins :) All you need is one bowl and just 6 ingredients!
Ingredients:
1/4 cup all purpose flour
1/4 cup coconut sugar
1/2 tsp. baking powder
1/4 cup mashed blueberries {I warmed frozen wild blueberries}
1/4 cup almond butter
2 eggs
Directions:
Preheat oven to 350F.
Whisk together the eggs, almond butter, and blueberries, then stir in the dry ingredients.
Spray or line a mini muffin tin (each one is probably a little different in size and will require a different baking time, so just be sure to watch them closely— I found my Wilton muffin tin at TJ Maxx!)
Pour in the batter 3/4 full (14-16 mini muffins) and bake for 7-8 minutes! {I topped mine with @simplemills icing + blueberries}
