Banana Muffins
Ingredients:
Muffin Batter-
1 1/2 cups almond flour
1 tsp. baking powder
1 tbsp. ceylon cinnamon
1/3 cup coconut sugar
2 eggs
2 bananas {1 cup mashed}
Cinnamon Pretzel Streusel-
1/2 cup almond flour
1/2 cup crushed pretzels
1 tbsp. cinnamon
1/4 cup coconut sugar
3 tbsp. almond milk
Streusel Directions:
In a blender or food processor, blend pretzels until you get a fine crumb {measure out the 1/2 cup after blended.}
Whisk together the dry ingredients, then stir in the almond milk!
Muffin Directions:
Preheat oven to 350F and line a muffin tin.
In a large bowl, whisk together the dry ingredients.
In a small bowl, whisk together the wet ingredients.
Pour the wet into the dry and stir until well combined.
Fill the muffin cups about 1/2 way full, top with Cinnamon Pretzel Streusel, and bake for 25-30 minutes. {Allow the muffins to cool for 5-10 minutes before enjoying!
