Chewy Cacao Nib Cookies
Ingredients:
1/2 cup almond milk
1 egg
1 1/4 cup almond flour
1 cup oat flour
1/2 tsp. baking powder
1/4 cup coconut sugar
1/4 cup cacao nibs
Directions:
Preheat oven to 350F and spray/line a baking sheet.
In a large bowl, whisk together the egg and milk then stir in the dry ingredients.
Using an ice-cream scoop or two spoons, place dough balls onto the baking sheet. (I wet a spoon with a little water and dipped it into a little bit of oat flour to flatten the cookies slightly—this helps the spoon not stick to the dough. Mine made 15 cookies.)
Bake for 8 minutes!
