Chewy Pumpkin Cookies
Ingredients:
1 1/2 cup @bobsredmill oat flour
1 tsp pumpkin pie spice
1 tsp baking powder
1/4 cup pumpkin purée
1/4 cup unsweetened applesauce
1 egg
1/4 cup agave or pure maple syrup
@ichoc_vegan_chocolate white chocolate chunks for the topping
Directions:
Preheat oven to 350F.
In a medium sized bowl, whisk together the dry ingredients and in a small bowl whisk together the wet ingredients.
Pour the wet into the dry, and stir until well combined.
Allow the batter to sit for a few minutes (this allows the liquid really soak into the dry ingredients—making the batter a little thicker.)
Use two spoons (or an ice cream scoop) to make 10 dough balls on a baking sheet, top with white chocolate, and bake for 8-10 minutes!
