Single Serving Banana Bread

This single serve banana bread is by far the BEST thing I have ever made…. and it’s baked in the microwave!! Soo good and easy— you have to try it out!

Ingredients:

1 egg

1 ripe banana (mashed)

1/4 tsp. baking powder

3 tbsp. almond flour

1 tbsp. coconut flour

1/2 tsp. cinnamon

1/4 tsp. vanilla extract (optional)

2 tbsp. chopped walnuts/chocolate chips (optional)

Directions:

  1. In a microwaveable cereal bowl or mug, whisk together the egg and mashed banana.

  2. Stir in the rest of the ingredients and microwave for 2 minutes!

  3. OR…pour the batter into a waffle maker!
