Jelly Donut Muffins

Ingredients:

  • 1 cup all purpose flour {I used @bobsredmill gluten-free 1:1 baking flour}

  • 1/2 cup granulated sugar {I used coconut sugar}

  • 1 tsp. baking powder

  • 1/4 cup oil or melted butter {I used melted @fourthandheart ghee}

  • 1/2 cup milk {I used almond milk}

  • 2 eggs

  • Jelly {for filling}

Directions:

  1. Preheat oven to 350F & line a muffin tin {makes 9 large muffins; if you spray the muffin liners with a little oil first, the muffins come out so so easy!}

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.

  3. Scoop some batter into the muffin tins, add jelly into the center {about 1 tbsp.}, add more batter on top, and bake for 19 minutes! {Coated in powdered sugar}
