Strawberry Chocolate Chip Bars
Ingredients:
1 cup gluten free all purpose flour {OR regular all purpose flour}
1/2 cup coconut sugar {or regular sugar}
1/2 tsp. baking powder
1/2 cup almond milk
1/4 cup oil {I used olive oil}
1 egg
1/2 cup diced strawberries
1/4 cup mini chocolate chips
Directions:
Preheat oven to 350F & spray/line an 8x8 baking dish.
In a large bowl, whisk together the flour, sugar, & baking powder.
In a small bowl, whisk together the almond milk, oil, and egg.
Pour the wet into the dry & stir until well combined.
Lightly coat the strawberries & chocolate chips in a little extra flour {helps them to not sink to the bottom} then add those to the batter.
Pour the batter into the 8x8 & bake for 23 minutes! {Let cool before cutting slices}
