Peanut Butter Pancakes

Ingredients:

  • 1/2 cup all purpose flour {i used @bobsredmill gluten free 1:1 baking flour}

  • 1/4 cup coconut sugar

  • 1/2 tsp. baking powder

  • 1/4 cup peanut butter {i used @enjoyjool peanut date butter}

  • 1/4 cup almond milk

  • 2 eggs

Directions:

  1. In a mixing bowl, whisk together the eggs, peanut butter, and almond milk.

  2. Whisk in the rest of the ingredients, then pour into a mini pancake maker or cook on the stove on low-medium heat. {Topped mine with yogurt + @traderjoes figs & greek yogurt + a drizzle of nut butter & @parkersrealmaple syrup!}
