Peanut Butter Oreos

Ingredients:

  • 1 1/2 cups all purpose flour {i used @bobsredmill 1:1 gf baking flour}

  • 1/4 cup cacao powder {i used @hiitnutrition jet black cocoa}

  • 1/2 cup granulated sugar {i used coconut sugar}

  • 1 tsp. baking powder

  • 1/2 cup almond milk

  • 1 egg

Filling:

  • 1/3 cup peanut butter {i used @traderjoes valencia pb}

  • 1/4 cup cream cheese {i used @violife_foods cream cheese}

  • 1/4 cup coconut sugar

Directions:

  1. Preheat oven to 350F.

  2. In a small bowl, whisk together the egg & milk.

  3. In a large bowl, whisk together the flour, sugar, cocoa powder, & baking powder.

  4. Pour the wet ingredients into the dry and stir until a dough forms.

  5. Use a mini cookie scoop to make 30 cookies & slightly flatten.

  6. Bake for 5 minutes, then let cool before adding the filling {use a blender to combine the filling ingredients}
