PB Cup Sweet Potato Muffins

Ingredients:

  • 1 cup steamed + mashed sweet potato

  • 1-2 tsp. cinnamon

  • 1/4 cup peanut butter

  • 1/2 cup coconut sugar

  • 2 eggs

  • 1/2 tsp. baking powder

  • 1/4 cup protein powder {i used @nuzest_usa smooth vanilla protein}

  • 6 pb cups {i used @unreal.snacks pb cups)

Directions:

  1. Preheat oven to 350F & spray/line a muffin tin.

  2. Put all of the ingredients into a food processor {or high powered blender} and blend until everything is well combined.

  3. I made 6 large muffins—filled each about 1/4 of the way with batter, added a pb cup, then added more batter on top & baked for 18 minutes!
