PB Cup Sweet Potato Muffins
Ingredients:
1 cup steamed + mashed sweet potato
1-2 tsp. cinnamon
1/4 cup peanut butter
1/2 cup coconut sugar
2 eggs
1/2 tsp. baking powder
1/4 cup protein powder {i used @nuzest_usa smooth vanilla protein}
6 pb cups {i used @unreal.snacks pb cups)
Directions:
Preheat oven to 350F & spray/line a muffin tin.
Put all of the ingredients into a food processor {or high powered blender} and blend until everything is well combined.
I made 6 large muffins—filled each about 1/4 of the way with batter, added a pb cup, then added more batter on top & baked for 18 minutes!
