Mini Chocolate Chip Cookies

Ingredients:

  • 1 1/2 cup @bobsredmill 1:1 gf baking flour

  • 1/2 cup coconut sugar

  • 1 tsp. baking powder

  • 1/2 cup almond milk

  • 1 egg

  • chocolate chips {i used @enjoylifefoods dark chocolate chips}

Directions:

  1. Preheat oven to 350F.

  2. In a small bowl, whisk together the egg & milk.

  3. In a large bowl, whisk together the flour, sugar, & baking powder.

  4. Pour the wet ingredients into the dry and stir until a dough forms. {the dough may be slightly sticky, so you can coat your hands with a little flour before rolling.}

  5. Roll the dough into 30 balls {about the size of a quarter}, flatten, top with chocolate chips, & bake for 5 minutes!
