Mini Blueberry Pancake Muffins

Ingredients:

  • 1 cup Purely Elizabeth grain free pancake mix

  • 3/4 cup almond milk

  • 1/4 cup wild blueberries

  • 1 scoop vanilla protein {I love the Nuzest protein}

Directions:

  1. Preheat oven to 350F and spray/line a mini muffin tin.

  2. In a large bowl, whisk together all of the ingredients & spoon batter into pan to make 16 mini muffins.

  3. Bake for 13 minutes!
