Microwave Chocolate Chip Cookies

Ingredients:

  • 1 egg

  • 2 tsp. olive oil {OR coconut oil/avocado oil}

  • 1/4 cup almond milk

  • 3 tbsp. coconut sugar

  • 1/4 tsp. baking powder

  • 1/2 cup gluten free baking flour {or all purpose flour}

  • 2-3 tbsp. chocolate chips

Directions:

  1. Stir together the egg, oil, and almond milk.

  2. Add in the dry ingredients & make sure everything is well combined!

  3. Pour the batter on a big plate or bowl, spread it into a thin layer, and microwave for 1 1/2-2 minutes.
