Microwave Blueberry Cake

Ingredients:

  • 3 tbsp. all purpose flour {i used @bobsredmill gf baking flour}

  • 2 tbsp. coconut sugar

  • 1/4 tsp. baking powder

  • 2 tbsp. blueberries

  • 3 tbsp. almond milk

  • 1 tbsp. olive oil

  • 1 egg

Directions:

  1. In a large microwave safe mug or small bowl, whisk together the wet ingredients.

  2. Stir in the dry ingredients + blueberries and microwave for 1 1/2 - 2 minutes! {i cut the mug cake into 3 slices and added the @simplemills frosting once the cake cooled}
