Lemon Blueberry Mug Cake

Ingredients:

  • 1 egg

  • 3 tbsp. lemon juice

  • 3 tbsp. coconut sugar

  • 1/4 tsp. baking powder

  • 3 tbsp. almond flour

  • 2 tbsp. all purpose flour {i used @bobsredmill gf 1:1 flour}

  • 2-3 tbsp. blueberries {i used frozen}

Directions:

  1. In a microwave safe mug or small bowl, whisk together the egg and lemon juice.

  2. Stir in the dry ingredients, top with blueberries, and microwave for 1 1/2 - 2 minutes!
