Jelly Donut Muffins
Ingredients:
1 cup all purpose flour {I used @bobsredmill gluten-free 1:1 baking flour}
1/2 cup granulated sugar {I used coconut sugar}
1 tsp. baking powder
1/4 cup oil or melted butter {I used melted @fourthandheart ghee}
1/2 cup milk {I used almond milk}
2 eggs
Jelly {for filling}
Directions:
Preheat oven to 350F & line a muffin tin {makes 9 large muffins; if you spray the muffin liners with a little oil first, the muffins come out so so easy!}
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Scoop some batter into the muffin tins, add jelly into the center {about 1 tbsp.}, add more batter on top, and bake for 19 minutes! {Coated in powdered sugar}
