Grain Free Pumpkin Pancakes

Ingredients:

  • 1 egg

  • 1 tbsp. honey {or pure maple syrup}

  • 3 tbsp. pumpkin purée

  • 2 tbsp. almond milk

  • 1/4 tsp. baking powder

  • 3 tbsp. almond flour

  • 1 tbsp. coconut flour

  • 1 tsp. pumpkin pie spice {or cinnamon}

Directions:

  1. Stir everything together and cook on low-medium heat! I topped mine with cashew butter and fresh figs from Trader Joe’s.
