Flourless Blueberry Banana Waffles

Ingredients:

  • 1 ripe banana

  • 1 egg

  • 2 tbsp. nut/seed butter {I used @traderjoes mixed nut butter}

  • 1/4 tsp. cinnamon

  • 3 tbsp. vanilla protein {I used @nuzest_usa smooth vanilla protein}

  • 1/4 tsp. baking powder

  • 3 tbsp. wild blueberries {I used frozen & warmed them in the microwave before mashing; if you use fresh, you may have to add a tbsp. of milk or water to the batter}

Directions:

  1. Whisk the egg, mashed banana, & nut butter together.

  2. Stir in the rest of the ingredients and pour the batter into a waffle iron {i used a mini waffle maker!}
