Cheesecake Bites
Ingredients:
12oz. cream cheese
1 tsp. vanilla extract
2 eggs
1/2 cup coconut sugar
2 tbsp. cacao powder
CRUST:
1/2 cup almond flour
1/2 cup coconut flour
1/4 cup coconut sugar
1/2 cup almond milk
Directions:
Preheat oven to 350F and line a cupcake pan.
Stir together the crust ingredients, press it down into 12 cupcake liners {about 1 1/2 tbsp. per cup}, and bake for 8 minutes.
Place the first 4 filling ingredients in a blender + blend until well combined, then separate into two bowls and stir the cacao powder into one of the bowls.
Layer the chocolate and vanilla batters over the crust and bake for 13 minutes.
Refrigerate for at least 1 hour before serving!
