Cashew Butter S'mores Cookies

Ingredients:

  • 1/2 cup nut butter {i used @abbysbetter coconut cashew butter}

  • 2 eggs

  • 1 cup all purpose flour {i used @bobsredmill gluten free baking flour}

  • 1/2 tsp. baking powder

  • 1/3 cup granulated sugar {i used coconut sugar}

  • 1/3 chocolate chips {i used @enjoylifefoods mini chocolate chips}

  • 28 mini marshmallows

Directions:

  1. Preheat oven to 350F.

  2. In a large bowl, whisk together the nut butter & eggs, then stir in the rest of the ingredients.

  3. I used a big cookie scoop to make 7 cookies and baked for 10 minutes!
