Carrot Cake Cookies
Ingredients:
3/4 cup all purpose flour {I used gluten-free all-purpose; you could also use cassava flour for grain-free}
1 cup almond flour
1/2 cup coconut sugar
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup finely diced carrots
1/4 cup almond milk
2 eggs
Directions:
Preheat oven to 350F and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the milk + eggs, then stir in the dry ingredients + carrots.
Use a large cookie scoop to make 8 cookies and bake for 16 minutes!
