Carrot Cake Cookies

Ingredients:

  • 3/4 cup all purpose flour {I used gluten-free all-purpose; you could also use cassava flour for grain-free}

  • 1 cup almond flour

  • 1/2 cup coconut sugar

  • 1 tsp. baking powder

  • 1 tsp. cinnamon

  • 1/4 tsp. nutmeg

  • 1/2 cup finely diced carrots

  • 1/4 cup almond milk

  • 2 eggs

Directions:

  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the milk + eggs, then stir in the dry ingredients + carrots.

  3. Use a large cookie scoop to make 8 cookies and bake for 16 minutes!
