Carrot Cake Banana Bread
Ingredients:
2 small ripe bananas
1/2 cup plain yogurt {i used @siggisdairy yogurt}
2 eggs
1/2 cup coconut sugar
1/2 cup cassava flour {or all-purpose flour}
1 cup almond flour
1 tsp. baking powder
3/4 cup finely diced carrots
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
Directions:
Preheat oven to 350F and spray/line a loaf pan.
In a large bowl, mash the bananas, whisk in the yogurt + eggs, then stir in the dry ingredients.
Pour batter into the loaf pan & bake for 40-45 minutes! let cool before topping with icing {i used @simplemills vanilla} & cutting into slices.
