Carrot Cake Banana Bread

Ingredients:

  • 2 small ripe bananas

  • 1/2 cup plain yogurt {i used @siggisdairy yogurt}

  • 2 eggs

  • 1/2 cup coconut sugar

  • 1/2 cup cassava flour {or all-purpose flour}

  • 1 cup almond flour

  • 1 tsp. baking powder

  • 3/4 cup finely diced carrots

  • 1 tsp. cinnamon

  • 1/4 tsp. nutmeg

  • 1/4 tsp. ginger

Directions:

  1. Preheat oven to 350F and spray/line a loaf pan.

  2. In a large bowl, mash the bananas, whisk in the yogurt + eggs, then stir in the dry ingredients.

  3. Pour batter into the loaf pan & bake for 40-45 minutes! let cool before topping with icing {i used @simplemills vanilla} & cutting into slices.
