Blueberry S'mores Mug Cake

Ingredients:

  • 1 egg

  • 1/2 tbsp. olive oil

  • 2 tbsp. mashed blueberries {I used frozen wild blueberries & thawed before mashing; also make sure to mash then measure.}

  • 3 tbsp. gluten free all purpose flour

  • 1/4 tsp. baking powder

  • 1 tbsp. coconut sugar

  • 1 tbsp. chocolate chips

  • Marshmallows

Directions:

  1. In a microwavable mug, whisk together the egg, olive oil, and mashed blueberries.

  2. Stir in the rest of the ingredients {except the marshmallows} & microwave for 45 seconds.

  3. Top with small marshmallow pieces and microwave for an additional 15 seconds. Enjoy!
