Blueberry Crumble Bars
Ingredients:
CRUMB LAYER-
1 cup rolled oats
1 1/4 cups all purpose flour {I used @bobsredmill gluten free 1:1 baking flour}
1/2 cup coconut sugar
1/2 cup oil {or melted butter}
BLUEBERRY LAYER-
1 1/2 cups wild blueberries {I used frozen}
1/4 cup coconut sugar
1 tbsp. oil {or melted butter}
Directions:
Preheat oven to 350F & grease/line a baking dish {I used an 8x8.}
In a large bowl, whisk together the dry ingredients, then stir in the oil {or butter.}
In a small bowl, stir together the blueberry layer ingredients.
Press down 1 & 1/4 cup of the crumble mixture into the bottom of the baking dish, top with the blueberry layer, then add remaining crumble mixture on top.
Bake for 45 minutes, let it cool before cutting into slices, or just scoop into a bowl & serve with ice-cream or yogurt! {I topped mine with @missjonesbakes vanilla frosting}
