Blueberry Chocolate Chips Bars

Ingredients:

  • 1 cup @bobsredmill gluten free 1:1 baking flour {or all purpose flour}

  • 1/2 cup coconut sugar {or regular sugar}

  • 1/2 tsp. baking powder

  • 1/2 cup almond milk

  • 1/4 cup oil {I used @bertolli_us olive oil}

  • 1 egg

  • 1/2 cup blueberries {i used @wymansfruit frozen wild blueberries}

  • 1/4 cup dark chocolate chips

Directions:

  1. Preheat oven to 350F & spray/line an 8x8 baking dish.

  2. In a large bowl, whisk together the flour, sugar, & baking powder.

  3. In a small bowl, whisk together the almond milk, oil, and egg.

  4. Pour the wet into the dry & stir until well combined; then fold in the blueberries and chocolate chips.

  5. Pour the batter into the 8x8 & bake for 23 minutes! {topped with blueberry yogurt after it cooled}
