Blueberry Chocolate Chip Donuts

Ingredients:

  • 1 cup almond flour

  • 1/2 cup all purpose flour {i used @bobsredmill 1:1 gf flour}

  • 1/2 tsp. baking powder

  • 1/2 cup coconut sugar

  • 1/2 cup almond milk

  • 2 eggs

  • 1/2 cup blueberries {i used @wymansfruit frozen wild blueberries}

  • 1/4 cup chocolate chips {+ extra for topping; i used @enjoylifefoods mini chocolate chips}

Directions:

  1. Preheat oven to 350F & spray the donut pan.

  2. Combine all of the ingredients, besides the blueberries & chocolate chips, in a high powered blender or food processor—putting the wet ingredients in first.

  3. Stir in the blueberries + chocolate chips, then spoon batter into the donut pans {makes 7-8 donuts; if you only have a pan with 6 slots you can pour the rest of the batter into a muffin tin.}

  4. Bake for 10-12 minutes and let cool before topping with yogurt + extra chocolate chips!
