Banana Muffins

Ingredients:

Muffin Batter-

  • 1 1/2 cups almond flour

  • 1 tsp. baking powder

  • 1 tbsp. ceylon cinnamon

  • 1/3 cup coconut sugar

  • 2 eggs

  • 2 bananas {1 cup mashed}

Cinnamon Pretzel Streusel-

  • 1/2 cup almond flour

  • 1/2 cup crushed pretzels

  • 1 tbsp. cinnamon

  • 1/4 cup coconut sugar

  • 3 tbsp. almond milk

Streusel Directions:

  1. In a blender or food processor, blend pretzels until you get a fine crumb {measure out the 1/2 cup after blended.}

  2. Whisk together the dry ingredients, then stir in the almond milk!

Muffin Directions:

  1. Preheat oven to 350F and line a muffin tin.

  2. In a large bowl, whisk together the dry ingredients.

  3. In a small bowl, whisk together the wet ingredients.

  4. Pour the wet into the dry and stir until well combined.

  5. Fill the muffin cups about 1/2 way full, top with Cinnamon Pretzel Streusel, and bake for 25-30 minutes. {Allow the muffins to cool for 5-10 minutes before enjoying!
